Caribbean stewed tripe (tripe recipe from Dominica)


1 pound of tripe
1/4 pint of milk
1/2 teaspoon of salt
1 clove of garlic
1 tablespoon of flour
1 small onion
1/4 ounces of margarine
1 teaspoon of lime juice


Wash the tripe in cold water. Then place it in a saucepan, and cover it with cold water. Add salt, half of the onion, lime juice and garlic and cook until tender. Drain the tripe and cut it into small pieces, then make a thin white sauce, using some flour, margarine, milk and the other half onion. Once the sauce starts to thicken, add the cubed tripe and simmer on low heat for a few minutes. Serve hot.
