1/2 kilogram of beef tripe
2 cups of glutinous rice
1 cup of regular rice
1 head of garlic
1 medium size onion
2 inches of ginger root
1 small bundle of spring onions
1 cup of patis fish sauce
1 kalamansi orange
Cooking oil


Cut the tripe into short stripes, then boil it. Once it is cooked, drain it, and set the broth aside. Wash the glutinous and the regular rice, and set aside as well. In large pan sauté half a head of garlic, chopped, the ginger cut into strips and the chopped onion. Once the onion turns golden, add in the tripe and the patis fish sauce, and stir cook for a few minutes. Add in the rice and stir cook for another five minutes. Cover with the reserved broth (and add water if needed). Bring to a boil and simmer for half an hour, or until rice start to disintegrate and form a thick rice soup. Add more water as necessary. Season with salt and pepper, garnish with chopped spring onions and fried garlic, dress with kalamansi juice, and serve hot.
